Bacon is bacon except when it's "Canadian-bacon," eh? Same deal with barbecue. Regions across North America claim their own version of barbecue and host "cook-offs" with big-money prizes for the best technique and most lip-smacking taste. Cluck, Grunt & Low are big fans of southern-style barbecue - slow-cooking only the best cuts of beef, pork, and chicken over indirect heat and a secret blend of wood smoke. (Hint: it's a blend of domestic fruitwoods with an occasional hardwood accent.)
